I noticed the movement as well, I suspect it's the result of not being able to create a stable equipment environment. Time lapse is difficult to manage on the cheap.

I enjoy the art quite a bit, the sound is frustrating. Serious question: can you adjust the volume? When I click a link for video or music, I almost always turn the volume down until I get an idea of what's playing, then turn up until it's comfortable. In this case, it's not like the SFX are drowning the dialogue...
I would really like to know more about Fried's workflow, anyone have links that explain how he does this?
